My first recipe on my blog! This is my go-to cookie recipe. It's easy, healthy and delicious.
These cookies are ready in no time and are incredibly delicious. I know the recipe by heart, since I've made them so many times. I like to make a big batch of cookies and bring them to people I'm visiting or my family. They are often so popular that people immediately ask for the recipe! They are free from gluten, refined sugar and they're vegan!
Tip: Bake the cookies, put them in a glass jar and you have a original and delicious gift for someone.
Pre-heat the oven to 185 degrees Celsius (365 F). Prepare the flax egg, by mixing the flax meal with water. In a bowl, mix the oat flour, baking powder and salt. Take another bowl and add coconut sugar and the solid coconut oil. Mix as well as possible, until most of the lumps are gone. Mix in the flax egg, cookie spices and vanilla extract. The mixture will now look wet. Now mix the wet and dry ingredients together and fold in the raisins and or chocolate chips.
Cover a baking tray with baking paper and divide the dough into 12 small portions. The easiest way is to roll small balls and flatten them a bit on the baking tray. Bake the cookies for about 12 minutes in the pre heated oven. When they're done, take them out of the oven and let them cool for at least 30 minutes before diving in.Gluten free oatmeal cookies
